A Green Zone dessert for people who wanted to run away but stayed for pie.I found a new spiritual discipline: cantaloupe pie.
Or, as I prefer to call it, Can’t Elope Pie.Because sometimes life says, “Run away!” Grace says, “Stay.” And dessert says, “Sit down. You’re not going anywhere until you finish this.”
Take one ripe cantaloupe, cut it into chunks, and pile it into a pie crust with a little sugar, cornstarch, lemon juice, cinnamon, and enough butter to make your cardiologist sigh from three states away. Throw a lattice crust on top so it looks respectable. Add pecans if you’re feeling theological. Bake it until the crust is golden and the cantaloupe is bubbling like a church potluck rumor. Then dust it with powdered sugar.
There you have it: Can’t Elope Pie.Perfect for weddings, second weddings, canceled weddings, people thinking about weddings, and anybody who has ever looked at the door and thought, “Maybe I could make it to Mexico before anybody notices.”
But don’t run. Stay. Have another bite.
